    Healthy whole grains meet chicken and pesto sauce. The result? A wonderfully flavorful dish you can serve as a salad, side dish or main dish.

    Ingredients

    • 1 pouch UNCLE BEN’S® READY WHOLE GRAIN MEDLEY™ Chicken Medley 
    • 2 cups diced or shredded cooked chicken (rotisserie chicken works well) 
    • 1/4 cup prepared pesto sauce (refrigerated or jarred) 
    • 1 head romaine lettuce, shredded 
    • 1/4 cup grated Parmesan cheese 
    • 2 medium tomatoes, diced  

    Instructions

    1. Follow heating instructions for the rice and microwave for 90 seconds.
    2. In a large mixing bowl, add the rice to the cooked chicken and pesto. Toss until well coated.
    3. Add the lettuce, cheese and tomatoes and toss again until thoroughly mixed. Serve.
