    • 2 tablespoons vegetable oil
    • 1 pound boneless skinless chicken breasts, cut in 1-inch pieces
    • 1 red bell pepper, cut into 1-inch pieces
    • 1 yellow bell pepper, cut into 1-inch pieces
    • ½ cup sliced green onion
    • 1 jar (14.1 ounces) Thai red curry sauce
    • 2 pouches (8.8 ounces each) UNCLE BEN'S® READY RICE® Whole Grain Brown
    • Chopped fresh cilantro 


    1. In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Cook and stir chicken in hot oil 3 to 4 minutes or until no longer pink in center. Remove from heat.
    2. Heat remaining 1 tablespoon oil in skillet. Cook and stir peppers and onion about 2 minutes or until crisp-tender. Add chicken and curry sauce. Cook 2 to 3 minutes longer or until hot.
    3. Meanwhile, heat rice as directed on package. Divide rice and chicken mixture among 4 dinner plates. Garnish with cilantro.
