    It’s hard to decide the best part of this recipe. Is it the delicious medley of shrimp, bok choy, and curry paste? Or is the fact that it only takes 15 minutes to make? We think it’s a combination of both. Enjoy! 


    4 teaspoons vegetable oil

    3/4 pound (51 to 60 count) medium raw shrimp, peeled and deveined

    2 cups thin green beans, cut in 1 1/2-inch pieces

    3 cups coarsely chopped bok choy

    1 can (8 ounces) bamboo shoots, rinsed and drained

    1 can (13.5 ounces) light coconut milk

    1 to 2 tablespoons green curry paste

    2 pouches (8.8 ounces each) UNCLE BEN'S® READY RICE® ORIGINAL LONG GRAIN 


    1. In 10-inch nonstick skillet, heat oil over medium-high heat. Cook and stir shrimp, green beans, bok choy, and bamboo shoots until shrimp is pink and vegetables are crisp-tender.
    2. Stir in coconut milk and curry paste. Cook and stir 2 minutes longer or until heated through and combined.
    3. Meanwhile, heat rice as directed on package. Divide curry and rice among 4 dinner plates. Garnish with cilantro, if desired
