Great for enhancing leftovers, this easy to make, easy to love, Spanish-inspired recipe brings so many favorite flavors together in one skillet.


  • 2 teaspoons olive oil
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, small, diced (optional)
  • 1 can black beans, drained and rinsed
  • 2 cups cooked turkey, chopped
  • 1 cup frozen sweet corn, thawed
  • 1 cup UNCLE BEN’S® Flavor Infusions Spanish Style Rice
  • 1 ¾ cups water
  • 2 green onions, sliced
  • 4 tablespoons sour cream
  • 1 cup cheddar cheese, shredded (optional)
  • Crushed taco chips (optional)


  1. Heat 2 teaspoons olive oil in a large skillet with a lid. Add onion, peppers, and jalapeño (if desired) to the hot oil and cook over medium-high heat until beginning to soften.
  2. Add drained black beans, chopped turkey, sweet corn, rice, and 1 ¾ cup water to the skillet.
  3. Over high heat bring to a boil then reduce heat to simmer; cover and cook for 9-11 minutes or until all the water is absorbed.
  4. Serve topped with green onions and a dollop of sour cream; sprinkle with shredded cheddar cheese and crushed taco chips if desired.
