    A tantalizingly sweet and lovely chicken-fried rice recipe, perfect for lunch or dinner — or as an appetizer or anytime snack.

    Ingredients

    Chicken-Fried Rice

    • 6 cups cooked UNCLE BEN’S®  ORIGINAL CONVERTED® Brand Rice, chilled
    • 1-1/2 tablespoon each: vegetable oil and sesame oil, divided
    • 1 pound boneless, skinless chicken breasts, diced in 1/2" pieces and seasoned with salt and pepper
    • 4 ounces baby carrots, sliced diagonally
    • 2 eggs, beaten
    • 1/4 cup green onions, chopped
    • 2 tablespoons soy sauce

     

    Sesame-Honey Sauce

    • 1/2 cup teriyaki glaze, prepared
    • 1/4 cup honey
    • 1 tablespoon sesame oil
    • 1 tablespoon toasted sesame seeds

     

    12 breaded chicken tenders, baked according to package instructions.

    Instructions

    1. Prepare rice according to package directions and chill.
    2. To prepare chicken-fried rice, heat 1/2 tablespoon each of: vegetable oil and sesame oil in large skillet over medium-high heat. Add diced chicken and stir-fry until cooked. Remove from skillet and reserve.
    3. Add 1 tablespoon each of vegetable oil and sesame oil to skillet and heat; add chilled rice and carrots. Stir-fry until rice is fully heated. Add eggs and stir-fry until cooked. Add green onions and soy sauce and stir-fry until blended.
    4. To prepare sesame-honey sauce, combine teriyaki glaze, honey, sesame oil and sesame seeds in bowl and whisk to blend.
    5. To serve, place chicken-fried rice on plates and serve with sesame-honey dipping sauce and chicken tenders.
