About This Dish

This flavorful rice dish — inspired by the cuisine of Spain — is a pure delight for seafood lovers! Shrimp, onions, tomatoes and Basmati rice blend perfectly to create a sumptuous meal.


  • 2 tablespoons vegetable oil 
  • 1 small onion, diced small 
  • 1 tablespoon salt 
  • 1 package UNCLE BEN’S®  Basmati Medley, Savory Herb 
  • 2-1/4 cups water 
  • 1 cup diced tomato, 1 medium or 2 Roma tomatoes 
  • 1 pound peeled and deveined shrimp 
  • 2 tablespoons butter 
  • 1 lemon, juiced
  • 1/2 cup chopped parsley  


  1. Heat oil in sauté pan and add onion and salt. Sauté until onion is soft and golden.
  2. Add in rice and seasoning pouch and stir to combine. Add in tomato and water and mix well.
  3. Bring mixture to a boil, cover and simmer on low heat for 20–25 minutes until most of the water is absorbed.
  4. Add in butter and shrimp. Cover and simmer an additional 3–5 minutes until shrimp are cooked.
  5. Stir in lemon juice and parsley.
  6. Mix well and serve.
