    Ingredients

    • 1 package (170 g) UNCLE BEN’S® Brown Rice & Quinoa, Roasted Red Pepper(Dry)
    • 1 tbsp (15 mL) Olive oil
    • 1 lb (500 g) Lean ground beef
    • 1/4 tsp (1 mL) Salt
    • Pinch Hot pepper flakes
    • 1/2 lb (250 g) Green beans, sliced diagonally into 1 1/2-inch (4 cm) pieces
    • 1/2 cup (125 mL) Sliced roasted red peppers
    • 1 Small onion, diced
    • 2 Cloves garlic, minced
    • 1/3 cup (75 mL) Low-sodium beef broth
    • 1 tbsp (15 mL) Cornstarch

    Instructions

    1. Prepare rice according to package directions.
    2. Meanwhile, in large skillet, heat oil over medium-high heat; cook ground beef, salt and hot pepper flakes, breaking up beef with a wooden spoon, for 2 or 3 minutes or until starting to brown. Add green beans, red peppers, onion and garlic; sauté for 3 or 4 minutes or until vegetables start to soften.
    3. Whisk broth with cornstarch. Add to skillet; bring to boil. Cook for 2 or 3 minutes or until sauce has thickened. 
    4. Serve beef mixture over rice.
