    About this dish

    Don’t let the word “breakfast” throw you! This dish can be enjoyed for lunch or dinner, too. Eggs plus ground turkey plus mozzarella plus beans equals a great anytime meal.

    Ingredients

    • 2 pouches UNCLE BEN’S® READY RICE® Whole Grain Brown 
    • 1 tablespoon vegetable oil 
    • 2 pounds ground turkey 
    • 1 cup green enchilada sauce 
    • 1 14.5-ounce can pinto beans, drained 
    • 2 tablespoons taco seasoning mix 
    • 6 eggs 
    • 1-1/2 cups shredded mozzarella cheese 
    • 1 pound tortilla chips  

    Instructions

    1. Heat pouches of rice in microwave according to package directions. Set aside.
    2. Heat a large sauté pan and add oil and ground turkey.
    3. When turkey has broken apart, add in pinto beans, seasoning and enchilada sauce. Mix well and heat until turkey is fully cooked. Add in heated rice and mix well again.
    4. In separate pan scramble eggs to desired doneness.
    5. Place scrambled eggs on bottom of 6-8 bowls and top each with turkey, rice and bean mixture.
    6. Top each bowl with mozzarella cheese and tortilla chips.
    7. Use chips to eat mixture or crumble them into the bowl.
