About This Dish

The distinct fruity flavors of this recipe come from orange juice in the dressing and cherries in the salad. Combine that with rotisserie chicken, fresh greens, and our flavor-infused rice and you have a wonderfully unique salad that’s always welcome.


  • 3 tablespoons extra virgin olive oil
  • ¼ cup freshly squeezed orange juice
  • ½ teaspoon Kosher salt
  • 1/8 teaspoon freshly cracked pepper
  • 1 cup UNCLE BEN’S® Flavor Infusions Roasted Chicken, cooked according to package directions (about 3½ cups cooked)
  • 2 cups shredded rotisserie chicken
  • 1 cup dried cherries (about 5 ounces) (or dried cranberries)
  • 1 cup toasted pecans halves
  • ½ cup chopped parsley leaves
  • ½ cup sliced red onion
  • 1 tablespoon freshly shredded orange zest (or 1 teaspoon dried orange zest)
  • 2 cups baby Arugula leaves, spinach or mixed greens (or favorite greens)


  1. In a small glass bowl, stir together all dressing ingredients; set aside.
  2. In large bowl stir together all salad ingredients except Arugula leaves.
  3. Add dressing to salad and toss to combine.
  4. On individual plates arrange Arugula leaves then top with a scoop of salad. Refrigerate leftovers.
