About This Dish

This hearty skillet combines the warm flavors of chicken and rice with autumn favorites kale and pumpkin.


  • 1 tablespoon olive oil, divided
  • 1 lb. boneless, skinless chicken breast cut into bite-sized pieces
  • ½ cup chopped onion
  • ¼ teaspoon salt
  • 1 teaspoon minced garlic
  • 3 cups chopped kale
  • 1 pouch UNCLE BEN'S®  READY RICE® Roasted Chicken Flavored
  • ½ cup canned pumpkin
  • 1½  cups low sodium chicken broth
  • ¼–½ teaspoons dried sage
  • ⅛ teaspoon ground black pepper
  • Grated Parmesan cheese, optional


  1. Heat 2 teaspoons oil in a large skillet over medium-high heat. Add chicken, onion and salt; sauté 6 minutes or until chicken is cooked and beginning to brown. Add garlic; sauté 30 seconds. Transfer to a bowl; keep warm.
  2. Heat the remaining teaspoon of oil over medium-high heat. Add kale; sauté 3 minutes or until tender.
  3. Squeeze READY RICE® pouch to break up rice, but do not microwave. Add rice, pumpkin, chicken broth, sage and pepper to pan; cook, stirring, 2 minutes or until hot. Stir in reserved chicken. Top with shredded Parmesan cheese, if desired.
