About This Dish

An amazing medley of sweet and savory flavors, thanks to the Parmesan cheese and butternut squash. Serve it with marinara sauce for even more pizza-ness.


  • 1 cup UNCLE BEN’S®  Instant Brown Rice, uncooked
  • Non-stick cooking spray
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 1/2 cup finely chopped onion
  • 1/4 cup minced shallots
  • 4 cups butternut squash, diced small
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 cup panko breadcrumbs
  • 3/4 cup grated Parmesan cheese
  • 1 24-ounce jar marinara sauce, warmed 


  1. Cook rice according to package instructions.
  2. Preheat oven to 400°F and spray a baking sheet with nonstick cooking spray.
  3. Sauté garlic, onion and shallots over medium heat with olive oil, 2 to 3 minutes.
  4. Add squash, tomato paste, Italian seasoning and salt. Cover and cook 15 to 20 minutes on low heat until squash is tender.
  5. Place mixture in mixing bowl to let cool. When cool add breadcrumbs, Parmesan cheese and rice. Mix thoroughly.
  6. Roll into golf-ball-size balls and coat each in more panko breadcrumbs. Place rice balls on baking sheet and spray with cooking spray.
  7. Bake at 400°F for 10 to 15 minutes. Serve with warm marinara sauce. Makes about 16 to 18.
