    About this dish

    Turn your long grain rice into a world-renowned dish from the coast of Spain.


    • 1 1⁄4 cups Uncle Ben’s® Converted Brand Original Long Grain Rice
    • 2 Tbsp. extra virgin olive oil
    • 1 tsp. paprika or smoked paprika
    • 1⁄2 tsp salt
    • 5 oz. Chorizo sausage, casing removed
    • 8 oz. chicken thighs, boneless and
    • skinless, 1 inch diced
    • 5 cloves garlic, minced
    • 1 medium yellow onion
    • 1 red bell pepper, chopped
    • 1/3 cup dry white wine
    • 1 can (14.5 oz.) diced tomatoes
    • 1 bay leaf
    • 2 cups chicken broth, lower sodium
    • 1 lemon, zested and cut into wedges
    • 1 pinch saffron threads (optional)
    • 6 oz. medium shrimp, raw peeled
    • 1⁄2 cup frozen peas, thawed


    1. In a medium bowl add 1 Tbsp. olive oil, paprika, salt and pepper, and chicken. Stir to coat and set aside.
    2. Heat 1 tablespoons olive oil in a large (12- 14 inch) lidded skillet or paella pan over medium-high heat. Add chorizo to the pan, breaking it up as it browns for about 2 minutes. Add the chicken to the pan with the sausage and continue to cook, allowing it to brown slightly for 2-3 minutes more.
    3. Add garlic, onion, red pepper, and rice to the hot pan and continue cooking and stirring to toast the rice, about 3 minutes.
    4. Stir in white wine and cook to reduce by half. Add canned tomatoes, chicken broth, bay leaf, parsley, lemon zest, saffron threads if using. Bring to a boil, cover, and reduce heat to medium-low. Simmer 15 minutes.
    5. Adjust salt to taste and arrange the shrimp on top of the hot rice. Cover and continue cooking for about 5 minutes more, or until the rice is tender and shrimp are cooked through, turning shrimp halfway through. Sprinkle thawed peas over the top and serve hot with lemon wedges.
