    About this dish

    Enjoy this delicious salad made with brown rice, black beans and Mediterranean spices. Grilled zucchini and onions add a touch of smokiness and complement the burst of flavor from the cherry tomatoes.

    Ingredients

    • 1 Tbsp. olive oil
    • 1 medium zucchini, cut lengthwise into ½-inch slices
    • 1 small red onion, peeled and quartered
    • 1 package UNCLE BEN’S® READY RICE® Brown Rice & Black Beans,  prepared according to package directions
    • 1 cup halved cherry tomatoes
    • 1 (15.5 oz.) can chickpeas (garbanzo beans), rinsed and drained
    • Optional toppings: Coarsely ground black pepper, thinly sliced or chopped fresh basil, shaved or grated Parmesan cheese

    Instructions

    1. Combine oil, zucchini, and onion toss lightly to coat.
    2. Prepare grill. Grill vegetables over medium-high heat 6 minutes or until crisp-tender and beginning to brown, turning occasionally. Transfer to a cutting board or work surface and cool slightly. Cut into bite-sized pieces.
    3. Place rice in a large serving bowl. Stir in grilled vegetables, tomatoes and chickpeas. Serve with optional toppings if desired.
