    About this dish

    The earthy taste and texture of walnuts meets the citrus burst of oranges in this amazingly flavorful recipe. And when you add in mushrooms and savory flavors, it’s a pure delight. 

    Ingredients

    • 1 1/2 cups sliced mushrooms (4 ounces)
    • 1 cup sliced celery (2 stalks)
    • 1 cup finely chopped onion (1 large)
    • 1 tablespoon vegetable oil
    • 1 14 ounce can vegetable broth
    • 2/3 cup water
    • 1 6 ounce package UNCLE BEN’S® Long Grain & Wild Rice, Original Recipe
    • 2 medium oranges, peeled and sectioned, or one 11-ounce can mandarin oranges
    • 1/2 cup chopped toasted walnuts

    Instructions

    1. In a large saucepan, cook mushrooms, celery, and onion in hot oil about 5 minutes or until tender. Add broth and water; bring to boiling.
    2. Stir in rice mix and seasoning packet; reduce heat.
    3. Simmer, covered, for 25 to 30 minutes or until rice is tender.
    4. Remove from heat.
    5. Gently stir in orange sections and walnuts.
