    About this dish

    If you've never tried making rice pudding in your pressure cooker, you're in for a treat.

    Ingredients

    • 1 cup Uncle Ben’s® Original Converted® Rice
    • 2 cups whole milk
    • 1 1⁄4 cup water
    • 1⁄2 - 1 tsp. cinnamon or cardamom
    • 1⁄2 tsp nutmeg
    • 1 tsp. vanilla
    • 1⁄4 cup brown sugar
    • 1/8 tsp. salt
    • 1/3 cup raisins (optional)

    Instructions

    1. Add milk, water, cinnamon or cardamom, nutmeg, brown sugar, vanilla, and salt to the Instant Pot. Stir in rice to combine.
    2. Seal the lid and close the vent. Press the Porridge or Rice Cooker button.
    3. Allow pressure to release naturally for 10 minutes. After 10 minutes, press Cancel to turn off the Instant Pot and open the vent to release the remaining pressure.
    4. Once depressurized, open the lid and stir in the raisins, if using. Set aside and keep warm with the lid off for thicker pudding for 10-20 minutes or until the desired consistency is reached. Pudding will thicken the longer it stands.
