    East meets west: Japanese-style Panko breadcrumbs and Italian herb spices blend seamlessly to create a uniquely wonderful and flavorful chicken dish.

    Ingredients

    • Nonstick cooking spray 
    • 3 tablespoons Japanese-style Panko breadcrumbs 
    • 4 tablespoons Dijon mustard 
    • 3 tablespoons salt free dried Italian herb spice blend
    • 4 boneless skinless chicken breasts (6 ounces each) 
    • 1 package UNCLE BEN’S® READY RICE® Long Grain & Wild Rice
    • 1 cup fresh button mushrooms cut in half 
    • 2 cups fresh or frozen green beans 

    Instructions

    1. Prepare rice according to package directions.
    2. Apply coating spray to large nonstick pan and heat over medium-high heat.
    3. Top each chicken breast with 1 tablespoon Dijon mustard. Combine the panko breadcrumbs and dry herbs. Sprinkle mixture on top of mustard.
    4. Place chicken in sauté pan, herb-crusted side down first. Sear for two minutes and turn chicken over. Reduce heat to medium and cook another 5 minutes or until chicken is cooked through.
    5. When chicken is almost cooked, add mushroom halves to pan.
    6. Steam green beans in microwave or on stovetop.
