    About this dish

    Any time is a good time for eggs, especially when served atop brown rice and black beans with seasoned turkey chorizo sausage. Serve with shredded cheddar, salsa and warm tortillas for a rich and hearty meal.



    1. In a large skillet, cook chorizo turkey sausage over medium heat 8 minutes or until browned and cooked through, breaking into crumbles.
    2. Add prepared rice to pan; stir to combine. Cover and keep warm.
    3. Place 3 inches of water in a large skillet with high sides or a large saucepan. Bring to a boil; reduce heat to a simmer. Working with one egg at a time, break egg into a small bowl; holding the bowl close to the water, slip the egg into water. Repeat with remaining eggs. Cook, uncovered, until whites are set and yolks are still soft, about 4 minutes.
    4. Divide rice mixture among 6 plates. With a slotted spoon, lift eggs out of water and place on rice. Top with cheese and salsa, if desired. Serve with hot sauce and warmed corn tortillas, if desired.
