About This Dish

This hearty soup is perfect for any time of year when you want a delicious way to warm up. The rich flavor comes from a combination of turkey, Italian-style sausage, butternut squash, kale, and Chicken & Herb flavored rice.

Ingredients

  • 2 teaspoons olive oil
  • 1 (6-ounce) link sweet Italian-style turkey sausage
  • 1 small yellow onion, diced
  • 2 ribs celery, diced
  • 1 ½ cup butternut squash, medium diced
  • 2 cups cooked turkey, chopped
  • 2 cups low sodium turkey or chicken stock
  • 4 cups water
  • 2 cups chopped kale, fresh or frozen
  • 1 cup of UNCLE BEN’S® Flavor Infusions Chicken & Herb
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Heat 2 teaspoons olive oil over medium-high heat in a large pot.
  2. Crumble sausage and add to pot, stirring and breaking apart as it cooks for about 3-4 minutes.
  3. Add onion, celery, and squash to the pot with the sausage and continue to cook, stirring occasionally, for about 5 minutes more, until vegetables begin to soften.
  4. Add chopped turkey, stock, water, and rice. Heat until it just begins to boil.
  5. Cover and cook on a low simmer for 10 minutes.
  6. Stir in kale and cook covered for about 5 minutes more, or until kale is tender.
  7. Serve in bowls with a sprinkle of Parmesan cheese if desired.
