    About this dish

    This hearty soup is perfect for any time of year when you want a delicious way to warm up. The rich flavor comes from a combination of turkey, Italian-style sausage, butternut squash, kale, and Long Grain & Wild Ready Rice.

    Ingredients

    • 2 pouches UNCLE BEN’S® READY RICE® Long Grain & Wild
    • 2 cups cooked turkey, chopped
    • 1 - 6oz. link sweet Italian style turkey sausage
    • 1 ½ cup butternut squash, medium diced
    • 1 small yellow onion, diced
    • 2 ribs celery, diced
    • 2 cups chopped kale, fresh or frozen
    • 2 cups reduced sodium turkey or chicken stock
    • 3 cups water
    • ¼ cup grated parmesan cheese(optional)

    Instructions

    1. Heat 2 tsp. olive oil over medium high heat in a large pot.
    2. Crumble sausage and add to pot, stirring and breaking apart as it cooks for about 3-4 minutes.
    3. Add onion, celery, and squash to the pot with the sausage and continue to cook, stirring occasionally for about 5 minutes more, until vegetables begin to soften.
    4. Add chopped turkey, stock, water, and rice. Heat until it just begins to boil.
    5. Cover and cook on a low simmer for 10 minutes.
    6. Stir in rice and kale and cook covered for about 5 minutes more, or until kale is tender.
    7. Serve in bowls with a sprinkle of parmesan cheese if desired.
