    Thai flavors of coconut, lime and cilantro, with Jasmine READY RICE® means dinner will be ready in a flash. Choose your toppings for a mild or spicy taste.


    • 1 tablespoon canola or other vegetable oil
    • 1 pound boneless, skinless chicken breast cut into thin strips
    • 1 tablespoon brown sugar
    • ¼ teaspoon ginger, ground
    • ¼ teaspoon salt
    • 1 can (13.6 oz.) coconut milk
    • 2 tablespoons fresh lime juice
    • 2 tablespoons low sodium soy sauce
    • 2 packages UNCLE BEN'S®READY RICE® Jasmine
    • 3 tablespoons chopped cilantro
    • Chopped peanuts, lime wedges, hot sauce optional


    1. Heat oil in a large skillet over medium-high heat. Add chicken and sauté 4 minutes or until cooked.
    2. Stir in the brown sugar, ginger, salt, coconut milk, lime juice and soy sauce. Bring to a simmer and cook 6 minutes, stirring occasionally.
    3. Cook rice according to package directions. Add rice and cilantro to skillet, stir well. Serve with chopped peanuts, lime wedges and hot sauce, if desired.
