About This Dish

Sometimes the simplest recipes are the most flavorful. This refreshing rice salad is a great example. It’s a perfectly delicious combination of rice, chicken, and fresh vegetables, like spinach and broccoli. Try this the next time you want to serve your family a salad.

Ingredients

  • ½ cup UNCLE BEN’S® Flavor Infusions Chicken & Herb, cooked according to package directions (about 1½ cups cooked)
  • 4 cups baby spinach leaves (or favorite greens)
  • 1½ cups cubed cooked chicken
  • 1 cup broccoli slaw (or cole slaw)
  • 1 cup sliced red peppers
  • ½ cup sliced or slivered almonds, toasted
  • ½ cup sliced red onion
  • 1/3 cup prepared Balsamic dressing (or favorite Italian-style dressing)

Instructions


  1. In a large bowl, toss together all ingredients.  Refrigerate leftovers.
