The flavors meld to perfection in this always-welcome combination of chicken, curry powder, raisins and UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice.

Ingredients

  • 2-1/2 pounds chicken pieces, skin on 
  • 1-3/4 cups water 
  • 2 teaspoons salt 
  • 2 teaspoons curry powder 
  • Chopped parsley 
  • 1 8-ounce can tomato sauce 
  •  1 medium onion, chopped 
  • 1 cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice 
  • 1/3 cup golden raisins 
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F.
  2. Combine rice, onion and raisins in 3-quart glass or ceramic casserole dish. Arrange chicken on rice mixture, skin side-up.
  3. Combine water, tomato sauce, curry powder, salt and Worcestershire sauce in bowl. Pour evenly around the casserole.
  4. Cover and bake for 20 minutes. Uncover and continue cooking for 15 minutes or until chicken is tender and cooked through.
  5. Garnish with chopped parsley, if desired.
