    Ingredients

    • 2 bags UNCLE BEN’S® Boil-In-Bag Rice
    • 1 tablespoon vegetable oil
    • 4 boneless, skinless chicken breasts
    • 1 red bell pepper, julienned
    • 10 button mushrooms, sliced
    • 1 14-ounce can coconut milk
    • 2 teaspoons curry powder
    • Juice of half a lime
    • Fresh chopped cilantro
       

    Instructions

    1. Prepare rice according to package directions.
    2. Add oil to frying pan and brown chicken breast on each side.
    3. Add the bell pepper and mushrooms; cook 2 minutes.
    4. Add the coconut milk and curry powder, bring to a boil and reduce to a simmer; cook until sauce thickens and chicken is cooked through.
    5. Add the lime juice at the end of cooking.
    6. Serve over rice and garnish with cilantro.
