    About this dish

    To come up with the recipe Chloe started to think about spending time outdoors, which really defines our Colorado lifestyle. We thought about Ready Rice and it seemed perfect to take camping and have outdoors. Chloe was able to simplify one of her absolute favorite meals into several ingredients and virtually 3 minutes of cooking time. 

    Ingredients

    • 1 pouch UNCLE BEN’S® READY RICE® Whole Grain Brown
    • 2 15-ounce cans black beans (can opener, if going camping)
    • Pinch of taco seasoning
    • ½ to 1 teaspoon garlic salt
    • 3 tomatoes
    • 1 bunch of cilantro
    • 4 tortillas, burrito size
    • 1 avocado (optional)
    • Shredded cheddar cheese (optional)

    Instructions

    1. Turn on camp stove or home stove burner to medium high.
    2. Pour the black beans into a medium pan and place on heat.
    3. Once beans start to boil, add rice and stir.
    4. Add garlic salt and taco seasoning to taste and reduce heat to medium low. Chop tomatoes, cilantro and avocado.
    5. Remove rice and beans from heat once rice is heated through.
    6. Heat tortillas over the flame, if camping, flipping after 10 seconds. At home, heat a cast iron frying pan without oil. When pan is hot put tortilla in and flip after 30 seconds.
    7. Spoon rice and bean mixture into tortilla, add chopped tomato, cilantro, avocado and cheese. Roll up and enjoy! Careful, this dish is easy, healthy, fun and MESSY!
