    This wholesome and hearty recipe brings a Latin twist to a classic comfort dish. With juicy corn, lean ground beef and a zing of lime, you’ll love every delicious bite.

    Ingredients

    1 pound extra-lean ground beef

    1 medium onion, chopped

    1 clove garlic, finely chopped

    1 cup frozen whole kernel corn, thawed

    1 cup red kidney beans, rinsed and drained (from 15-ounce can)

    1 cup black beans, rinsed and drained (from 15-ounce can)

    1 medium tomato, seeded and chopped

    1 can (8 ounces) no-salt-added tomato sauce

    1 tablespoon chili powder

    1 teaspoon ground cumin

    2 pouches UNCLE BEN'S® READY RICE® ORIGINAL LONG GRAIN

    Lime wedges

    Cilantro 

    Instructions

    1. In Dutch oven or 4-quart saucepan, cook and stir ground beef, onion and garlic 5 to 7 minutes or until brown; drain.
    2.  Stir in remaining ingredients except rice, lime and cilantro. Heat to boiling. Cover and simmer 15 to 20 minutes, stirring occasionally, until thick.
    3.  Meanwhile, heat rice as directed on package. Serve chili with rice. Garnish with lime wedge and cilantro.
