    About this dish

    What’s delightfully refreshing, made with nutritious ingredients, and filled with fresh flavor? This easy-to-make rice salad that features fresh mozzarella, rotisserie chicken, veggies, and rice. Perfect as a light meal or as a side dish.

    Ingredients

    • Dressing:
    • ¼ cup extra virgin olive oil
    • 2 tablespoons apple cider vinegar
    • ½ teaspoon Italian seasoning
    • ½ teaspoon Kosher salt
    • 1/8 teaspoon freshly cracked pepper
    • Salad:
    • 1 cup UNCLE BEN’S® Flavor Infusions Chicken & Herb, cooked according to package directions (about 3½ cups cooked)
    • 4-ounces fresh Mozzarella cheese, cut into ½-inch cubes
    • 1 1/3 cups shredded rotisserie chicken
    • 1 cup shredded carrot (about 2 medium)
    • 1 cup cherry tomatoes, cut in half
    • 1 cup shredded zucchini (about 2 small)
    • ½ cup sliced red onion
    • ¼ cup chiffonade fresh basil leaves  

    Instructions

    1. In a glass bowl, stir together all dressing ingredients; set aside. 
    2. In the center of individual plates, place about 1 cup cooked rice. 
    3. Arrange remaining ingredients around the rice then drizzle with dressing. Refrigerate leftovers.

    OPTION:  In large bowl stir together all salad ingredients, then toss with dressing.
