    About this dish

    A rice treat for vegetarians! This recipe combines sour cream, peppers, tomatoes and Monterey Jack cheese in a tidy tortilla roll-up.

    Ingredients

    • 2 tablespoons green onions, diced 
    • 2 tablespoons sour cream (low fat) 
    • 2 teaspoons olive oil 
    • 2 tablespoons lime juice 
    • 1/3 cup UNCLE BEN’S® Whole Grain Brown Rice 
    • 1/4 cup diced poblano peppers
    • 1/4 cup diced red and green bell peppers
    • 6 8-inch flour tortillas 
    • 3 plum tomatoes, diced 
    • 1/2 cup shredded Monterey Jack cheese 

    Instructions

    1. Cook rice according to package directions.
    2. In a bowl, combine peppers, tomatoes, green onions, olive oil, lime juice and sour cream. Mix well. Stir in cooked rice.
    3. To prepare roll-ups, sprinkle 1 tablespoon of cheese and 3 tablespoons of vegetable rice mixture on each tortilla and roll firmly. Serve.
