    About this dish

    Now you can easily make one of your favorite Indian restaurant rice dishes. And all it takes is 15 minutes!

    Ingredients

    • 1/4 cup prepared curry powder
    • 3/4 pound boneless, skinless chicken breast, cut into strips 
    • 1 medium onion, diced 
    • 1 red bell pepper, diced 
    • 1 tablespoon olive oil 
    • 3/4 cup chicken or vegetable broth 
    • 1 pouch UNCLE BEN’S® READY RICE® Basmati Rice
    • 1 cup plain nonfat yogurt 
    • 4 sprigs cilantro, chopped for garnish

    Instructions

    1. In plastic storage bag, combine curry powder, chicken, onion and bell pepper. Shake well to coat chicken and vegetables in curry powder.
    2. Heat sauté pan over high heat and add oil. Add chicken mixture to pan and sauté until chicken is almost done, about 5 minutes.
    3. Add broth and rice to pan. Cook until most of the broth is absorbed, about 3 minutes.
    4. Stir in yogurt until well combined.
    5. Garnish with cilantro and serve.
