    About this dish

    In less than 10 minutes, you and your family could be digging into a savory mix of rice, egg and veggies.

    Ingredients

    • 3 cups cooked Uncle Ben’s® Long Grain Rice (cooked from 1 cup dry rice)
    • 1 Tbsp. vegetable oil
    • 1 Tbsp. sesame oil
    • 2 green onions, sliced with tops and whites separated
    • 2 cloves garlic, minced
    • 2 cups fresh or frozen chopped mixed vegetables
    • 2eggs
    • 2 Tbsp. soy sauce (lower sodium)
    • 1⁄2 Tbsp. oyster sauce or fish sauce (optional)

    Instructions

    1. Heat a large skillet over high heat. Add the vegetable oil to the pan and once the oil appears to shimmer crack the eggs, stirring quickly with a spatula to scramble until just set but still slightly wet. Push to the outside edge of the pan.
    2. Add the white parts of the green onions and the garlic and stir fry for about 30 seconds until fragrant.
    3. Add chopped vegetable to the pan continue to stir fry for 2 minutes, or until the vegetables become bight in color.
    4. Add the sesame oil to the pan and then the cooked rice. Cook and stir, breaking up any clumps of rice and eggs, letting the rice fry for about 3 minutes. Stir in soy sauce, and oyster or fish sauce if using, continuing to stir well to combine.
    5. Serve fried rice topped with remaining green onion tops.
