    Tender, juicy pork chops are filled with a savory-sweet apple and wild rice stuffing.

    Ingredients

    • 3 teaspoons canola oil, divided
    • ½ cup peeled, chopped firm apple (such as Fuji or Braeburn)
    • 2 tablespoons golden or regular seedless raisins
    • ¼ teaspoon cinnamon
    • 1 pouch UNCLE BEN'S® READY RICE® Long Grain & Wild
    • 6 (5 ounce) boneless, center-cut loin pork chops, trimmed, about ¾” thick
    • ¼ teaspoon salt
    • ⅛ teaspoon ground black pepper

    Instructions

    1. Preheat oven to 375ºF.
    2. Heat 1 teaspoon oil in a large skillet over medium high heat. Add apples, raisins and cinnamon; sauté 3 minutes or until apples are softened. Remove from heat; transfer mixture to a bowl.
    3. Prepare READY RICE® according to package directions. Add to apple mixture, stir well to combine.
    4. Cut a horizontal slit through the thickest portion of each chop to form a pocket. Fill each pocket with ⅓ cup rice mixture; close with toothpicks. Sprinkle on both sides with salt and pepper.
    5. Wipe skillet with paper towel. Heat 1 teaspoon oil over medium-high heat. Add 3 chops and cook 3 minutes per side or until browned. Transfer to a 13"x9" baking dish. Repeat with remaining oil and chops. Place the baking dish in the oven and bake, uncovered, at 375ºF; for 20 minutes. Serve the chops with pan juices.
