This Hawaii-inspired recipe comes to us from young chef Atticus, a 2015 Ben’s Beginners™ winner. It’s filled with the flavors of the South Pacific, including coconut milk and pineapple. Plus, it’s quick ‘n’ easy to make!
Combine the coconut milk and chicken stock in a pan and bring to boil.
Once liquid has come to a boil, add rice and allow to simmer.
Once rice has cooked remove from stove, let cool, and pour into a large bowl.
Mix in shredded carrots, scallion, cooked bacon, pineapple chunks, cashews, and ginger.
Stir all ingredients in bowl.
