About This Dish

Take a south-of-the-border adventure tonight without leaving your kitchen! Simply combine chicken, sofrito and tangy alcaparrado together to create this filling and flavorful dish!


  • 3 1/2 lbs chicken, cut in to 8 pieces
  • Salt and black pepper to taste
  • 2 tablespoons oil (to stir-fry the chicken)
  • 1/2 cup basic sofrito (1/4 cup chopped onion, ¼ cup of chopped green pepper and 3 mashed garlic cloves)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon cilantro and annatto season
  • 2 oz tomato sauce
  • 3 cups UNCLE BEN’S® Original Converted Brand Rice
  • 2 red peppers, sliced
  • 3 1/2 cups water
  • 2 tablespoons alcaparrado (olives and capers) 


  1. Season chicken ahead of time with salt and pepper; let stand in the refrigerator until you are ready to cook.
  2. Heat the oil in a caldero or Dutch oven to medium heat.  Brown chicken on each side for approximately 5 minutes and remove to plate.
  3. Stir in sofrito, cumin, cilantro and annatto season and tomato sauce and sauté for about 2 minutes at low heat.
  4. Stir in rice and sliced red peppers and mix well with sofrito.  Add chicken and water; bring to boil.
  5. Cook covered over low heat about 20 to 25 more minutes, until rice is completely cooked.
  6. Stir in olives and capers and season with salt and pepper.
