About This Dish

This recipe is as American as cornflakes because of the not-so-secret ingredient that gives this dish its unique flavor.


  • 2-1/2 cups water 
  • 1 teaspoon salt 
  • 3 green peppers, seeded and halved 
  • 4 tablespoons butter, divided 
  • 1 cup chopped onion
  • 1/2 cup chopped celery
  • 1 clove garlic, minced 
  • 1 can corn with peppers (11 ounces), drained 
  • 4 tablespoons chopped fresh parsley 
  • 1 teaspoon crushed dried rosemary
  • 1/4 cup cornflakes, crushed  


  1. Preheat oven to 350°F
  2. Bring water to boil in medium saucepan. Stir in rice and salt, cover tightly, reduce heat and simmer until most of water is absorbed.
  3. While rice is cooking, blanch peppers in boiling water until tender, about 5 minutes; remove and drain. Sauté onion, celery and garlic in 2 tablespoons butter until tender, about 5 minutes, then combine with corn, parsley, rosemary and cooked rice.
  4. Arrange green peppers in buttered baking dish and mound 1 cup of the rice mixture in each pepper.
  5. Melt remaining 2 tablespoons of butter and combine with cornflakes. Spoon over peppers.
  6. Bake uncovered until crumbs are brown, 12 to 15 minutes.
