    About this dish

    Can a rice salad be hearty and savory while also being light and refreshing? Yes! This appetizing combination of roast beef, fresh vegetables, and zesty, aromatic dressing is the proof. Your family will enjoy it as a salad, side dish or entrée.

    Ingredients

    • Dressing:
    • ¼ cup extra virgin olive oil
    • 2 tablespoons red wine vinegar
    • 1 teaspoon Dijon mustard
    • ½ teaspoon prepared horseradish
    • ¼ teaspoon Kosher salt
    • ¼ teaspoon freshly cracked pepper
    • Salad:
    • 4 cups baby Arugula or spinach leaves (or favorite greens)
    • 1 cup UNCLE BEN’S® Flavor Infusions Garlic & Butter, cooked according to package directions (about 3½ cups cooked)
    • 6 ounces thinly sliced deli roast beef, cut into strips
    • 1 1/3 cups yellow cherry tomatoes (or red cherry tomatoes)
    • 1 cup roasted red peppers, sliced thinly
    • 1 cup pea pods, sliced into strips
    • 1 cup chopped zucchini
    • ½ cup chopped green onions

    Instructions

    1. In a glass bowl, stir together all dressing ingredients; set aside.
    2. In the center of individual plates, place about 1 cup arugula, top with 1 cup cooked rice.
    3. Arrange remaining ingredients around the rice then drizzle with dressing. Refrigerate leftovers.

     

    OPTION:  In large bowl stir together all salad ingredients, then toss with dressing.
