    About this dish

    This refreshing Mediterranean-influenced salad, features aromatic rice and meaty chunks of tuna atop crisp spring lettuces. Serve as a main or side dish.

    Ingredients

    • One 8.5-ounce package UNCLE BEN'S® READY RICE® Basmati
    • 2 tablespoons fresh lemon juice
    • 1/4 cup extra-virgin olive oil
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/2 cup shredded carrot
    • 1/2 cup frozen peas, thawed
    • 1/4 cup chopped mint
    • 1/2 teaspoon lemon zest (optional)
    • One 5-ounce can Bumble Bee® Solid White Albacore Tuna in Water, drained
    • 4 cups (about 4 ounces) spring mix salad 

    Instructions

    1. Cook the rice according to package instructions. Pour the rice into a medium bowl and let cool while preparing the dressing.
    2. In a small bowl, whisk the lemon juice and olive oil together; Season with salt and pepper.
    3. Add the carrot, peas, mint, lemon zest, if desired, and tuna to the rice. Pour the dressing over the mixture and toss.
    4. Serve over lettuce greens with lemon wedges.
