UNCLE BEN’S® Southwest Chicken

Simply Add:

1 Tbsp. oil
1 Lb. of cubed chicken
1 cup frozen corn (7 oz.)
2 cups cherry tomatoes (12 oz.)
1 bell pepper, diced (7 oz.)
2 1/2 cups water

Cooking Instructions

1. Begin by heating oil in lidded skillet over medium-high heat and cook chicken for 3-4 minutes to brown.
2. Add corn, tomatoes, and pepper to the skillet and continue cooking for 5-6 minutes, until internal temperature of chicken is 165 ℉. Remove everything from skillet and set aside.
3. Combine grains, seasoning and water in skillet and bring to a boil. Cover, reduce heat to medium-low and simmer for 25 minutes, or until most water is absorbed. Remove from heat.
4. Mix in chicken and vegetables. Cover and set aside for 5 minutes. Stir well and enjoy.
