About This Dish

The fresh flavors of a vegetable patch combine with cream, cheese, eggs and rice to create the best quiche your family has ever tasted.


  • 1 cup UNCLE BEN’S® Instant Brown Rice, uncooked
  • 1 (14-ounce) can chicken or vegetable broth
  • 1 package frozen spinach, thawed and squeezed dry
  • 1 cup shredded Swiss cheese, divided
  • 1 cup chopped tomato, divided
  • 1/2 cup chopped onion
  • 1 cup light cream
  • 3 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/4 teaspoon ground nutmeg


  1. Preheat oven to 400°F.
  2. Cook rice according to package directions, using broth instead of water. If necessary, add water to broth to meet the required amount of liquid in directions.
  3. In the meantime, combine spinach, 1/2 cup shredded Swiss cheese, 1/2 cup chopped tomato, onion, cream, eggs, salt, pepper and nutmeg, set aside.
  4. Combine rice and the remaining 1/2 cup shredded Swiss cheese in large bowl; set aside.
  5. Spray a 10-inch quiche dish with cooking spray or oil. Press rice mixture into bottom and sides of dish; using wax paper to press evenly. Bake for 5 minutes. Lower oven temperature to 375°F. Pour the spinach mixture into rice crust. Top with remaining 1/2 cup chopped tomato.
  6. Continue baking at 375°F for 25 minutes or until knife inserted near center comes out clean.
