Ingredients

1 box (6 ounces) UNCLE BEN'S® 5 GRAIN MEDLEY, QUINOA PILAF

2 ¼ cups water

1 tablespoon butter or olive oil

3 tablespoons vegetable oil

1 pound beef round steak, sliced in ¼-inch strips

3 cups broccoli florets

2 cups sugar snap peas

1 tablespoon finely chopped gingerroot

1 tablespoon lemongrass, finely chopped

1 to 2 red serrano or jalapeno peppers, sliced

2 tablespoons water

1 tablespoons soy sauce

Cilantro 

Instructions

  1. Combine rice, contents of seasoning packet, the 2 ¼ cups water and butter in a medium saucepan. Stir well.
  2. Bring contents to a boil. Reduce heat to medium-low; simmer covered 20 minutes or until water is absorbed. Remove from heat; set aside 5 minutes before serving.
  3. Meanwhile, In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium-high heat. Cook and stir half the beef 3 to 4 minutes or until brown; remove from skillet. Repeat with 1 tablespoon more oil and remaining beef; remove from skillet.
  4. Heat remaining 1 tablespoon oil in same skillet. Cook and stir broccoli, peas, ginger, lemongrass, and chili pepper 4 to 5 minutes longer until vegetables are crisp-tender. Stir in cooked beef, the 2 tablespoons water and the soy sauce just until combined.
  5. Divide rice and beef mixture among 4 dinner plates. Garnish with cilantro.
