About This Dish

Salsa, rice, and beans, oh my! Look no further for a deliciously filling vegetarian meal that the whole family will love! 

Ingredients

SALSA 

2 Roma tomatoes, seeded and chopped

1/4 cup chopped red onion

1 clove garlic, finely chopped

1 teaspoon lime juice

1 teaspoon vegetable oil

1/4 teaspoon chipotle chili powder 



RICE AND BEANS

1 tablespoon vegetable oil

1 medium red bell pepper, chopped

3/4 cup no-salt-added black beans, rinsed and drained (from 15-ounce can)

3/4 cup no-salt-added dark red kidney beans, rinsed and drained (from 15-ounce can)

1/2 cup frozen (thawed) whole kernel corn

1 jalapeño pepper, thinly sliced

2 pouches (8.8 ounces each) UNCLE BEN'S® WHOLE GRAIN MEDLEY™ BROWN RICE AND QUINOA

1/2 cup light sour cream

Chipotle chili powder, if desired

Cilantro

Lime wedges 

Instructions

  1. In medium bowl, stir together all Salsa ingredients; set aside.
  2. In 12-inch skillet; heat oil over medium heat. Cook and stir bell pepper 2 to 3 minutes or until softened. Stir in beans, corn and jalapeño pepper. Cook and stir 2 to 3 minutes or until hot.
  3. Meanwhile, heat rice as directed on package. Stir rice into bean mixture. Continue to cook and stir 1 to 2 minutes longer until heated through and ingredients are combined. (Add 1 to 2 tablespoons water to keep rice and beans moist, if needed.)
  4. Divide grain mixture evenly among 4 dinner plates. Divide salsa and sour cream among plates. Sprinkle sour cream with additional chipotle chili powder, if desired. Garnish with cilantro and lime wedge.
