About This Dish

All your favorite southwestern flavors can be found in this delectable recipe, from beef and black beans to corn and cheddar cheese. Served over rice and quinoa, it’s a mouthwatering treat!


  • 1 package UNCLE BEN’S®  5 Grain Medley, Quinoa Pilaf
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1 pound ground beef
  • 1 cup frozen corn
  • 1 cup diced tomato, 1 medium or 2 roma
  • 1 (14.5-ounce) can black beans, drained and rinsed
  • 3 tablespoons taco seasoning
  • 1 cup cheddar cheese


  1. Prepare rice according to package instructions.
  2. In separate, large sauté pan, heat oil. Add in onion and sauté until golden brown.
  3. Add in ground beef and sauté until browned and cooked.
  4. Add in corn, tomato, black beans and taco seasoning. Cook until tender and heated through.
  5. When rice is finished cooking combine with beef and vegetable mixture.
  6. Mix well and top with cheddar cheese.
  7. Serve.
