About This Dish

This recipe captures the spirit of the Southwest with spicy Mexican influences and a north-of-the-border love of combining different flavors.

Ingredients

  • Arizona Rice Pilaf
  • 3-1/3 cups chicken or vegetable broth
  • 1-1/2 cups UNCLE BEN’S®  ORIGINAL CONVERTED® BRAND RICE, uncooked
  • 1-1/2 cups grilled vegetables (red onion, tri-color bell pepper, zucchini, sweet potato, diced into 1/4" pieces)
  • 1 teaspoon Southwest seasoning

 

Fire-Roasted Cream Sauce

  • 1/2 cup fire-roasted peppers, drained, pureed
  • 1/2 cup prepared Alfredo Sauce
  • 1 roasted garlic clove, mashed

 

  • 2 tablespoons butter, melted
  • 1/2 tablespoon southwest chipotle seasoning
  • 6 boneless, skinless chicken breasts

Instructions

  1. For Arizona Rice Pilaf, prepare rice according to package directions substituting broth for water. Add grilled vegetables and Southwest seasoning to prepared rice; toss to blend.
  2. For Fire-Roasted Cream Sauce, simmer roasted pepper puree in saucepan over low heat until slightly thickened. Add Alfredo Sauce and roasted garlic; simmer until heated through.
  3. Combine butter and chili seasoning; reserve. Grill chicken until fully cooked, then brush each piece with chile butter and grill again briefly on each side.
  4. To serve, spoon Fire-Roasted Cream Sauce sauce evenly on plates; top with a chicken breast and serve with Arizona Rice Pilaf and roasted vegetable mixture.
