About This Dish

Orange, honey, and thyme come together to create this sweet and savory combination. The aroma alone will bring everyone to the kitchen table!

Ingredients

  • 2 pouches UNCLE BEN’S® READY RICE® WHOLE GRAIN MEDLEY™ Brown & Wild
  • 1 large seedless orange, halved
  • 8 fresh thyme sprigs
  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/4 tsp each salt and pepper

Instructions

  1. Prepare rice according to package directions.
  2. Meanwhile, squeeze juice from half of the orange. Slice remaining half into 3 or 4 slices. Remove leaves from half of the thyme sprigs.
  3. Preheat oven to 425˚F. Toss together chicken thighs, orange juice, thyme leaves, olive oil, honey, salt and pepper. Transfer to 13- x 9-inch baking dish. Top with remaining thyme sprigs and orange slices.
  4. Bake for 30 to 35 minutes or until chicken is cooked through and juices run clear. Serve chicken with rice and pan juices.
