About This Dish

A complete meal that will leave your family full and satisfied. Cream of chicken soup, pimentos, peas and carrots help make this a wonderfully tasty dish.

Ingredients

  • 1 box UNCLE BEN’S® COUNTRY INN® Chicken & Vegetable Rice
  • 1 tablespoon olive oil
  • 1/2 cup chopped onions
  • 1 can low-fat condensed cream of chicken soup
  • 2 cups frozen peas and carrots
  • 1 cup chicken or vegetable broth
  • 1 4-ounce jar pimentos, drained
  • 3 tablespoons chopped fresh parsley
  • 6 cups diced cooked turkey
  • 1/2 cup bread crumbs
  • 3 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F.
  2. Prepare rice according to package instructions.
  3. Sauté onions in oil over medium heat. Add soup, carrots and peas, broth, turkey, pimentos, parsley, almonds and rice.
  4. Transfer mixture into a 9x13x2-inch casserole dish. Combine breadcrumbs and butter and cover top of casserole. Bake 10 to 15 minutes or until mixture is heated through.
