About This Dish

Your family will love the way the flavor of olives, tomatoes and lemon juice come together with long grain and wild rice in this chicken dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into 4 pieces
  • 1 box UNCLE BEN’S® Long Grain & Wild Rice, Original Recipe
  • 4 ounces sliced black olives
  • 1 medium tomato, diced
  • 2 tablespoons lemon juice
  • 2-1/2 cups chicken or vegetable stock

Instructions

  1. Sauté chicken pieces in olive oil over medium heat, browning well on all sides.
  2. Add all remaining ingredients to the pan.
  3. Bring to a boil, reduce heat to low, cover and simmer 20 minutes or until all liquid is absorbed and rice is tender.
