Ingredients

  • 1 cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice 
  • 2-1/4 cups chicken or vegetable broth 
  • 1 tablespoon butter 
  • 2 tablespoons vegetable oil 
  • 1 medium onion, chopped (about 2 cups) 
  • 1/2 pound Italian sausage (about 3 links)
  • 1 cup sliced button mushrooms (about 8 mushrooms)
  • 1 teaspoon salt 
  • 1/2 teaspoon black pepper 
  • 2 cups baby spinach, rinsed and drained 
  • 1/2 cup shredded Parmesan cheese 

Instructions

  1. Cook rice according to package instructions, replacing water with broth and butter.
  2. While rice is cooking, grill sausages on preheated outdoor grill until no longer pink inside. When sausage is done slice and set aside.
  3. Heat 2 tablespoons vegetable oil in large sauté pan. Cook onion until tender and browned.
  4. Add mushrooms to pan and sauté until mushrooms are browned.
  5. Add 1 teaspoon salt and 1/2 teaspoon black pepper.
  6. Add spinach to pan and cook until wilted.
  7. When rice is finished cooking, combine with sausage and vegetable mixture.
  8. Mix well with half of the Parmesan cheese.
  9. Top mixture with remaining Parmesan cheese and serve.
