About This Dish

This delicious recipe is packed with so much south-of-the-border flavor, you’ll probably spend less time at your local Mexican restaurant and more time eating at home.

Ingredients

  • 1 box UNCLE BEN’S® Brown Rice & Quinoa, Roasted Red Pepper
  • 2 pounds skirt steak or flank steak
  • 1 large onion, sliced
  • 1 green pepper, sliced into strips
  • 1 red pepper, sliced into strips
  • 2 teaspoons salt, divided
  • 2 teaspoons black pepper, divided
  • 2 teaspoons cumin, divided
  • 2 tablespoons vegetable oil
  • 1 ripe avocado
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 head romaine lettuce, chopped

Instructions

  1. Cook rice according to package instructions.
  2. While the rice is cooking, heat a grill or broiler. Season both sides of meat with 1 teaspoon each salt, pepper and cumin.
  3. In a medium bowl, toss the sliced onion, green and red peppers with remaining salt, pepper and cumin.
  4. Grill or broil the meat for about 3 minutes on each side. When done, remove from pan and set aside.
  5. Add vegetable oil to a skillet and heat. Sauté seasoned peppers and onions until browned and soft.
  6. To prepare the dressing, slice avocado and spoon the insides into a small bowl. Add the lime juice, a pinch of salt, cilantro, olive oil and vinegar. Mix with a fork or potato masher until well combined.
  7. To assemble the salad, place a handful of chopped romaine lettuce on a plate. Top with several heaping spoonfuls of rice mixture followed by onion and peppers. Slice steak and lay on top of salad and top with guacamole dressing.
