With bok choy, jalapeño peppers, and gingerroot, it’s no wonder this dish bursts with flavor in every bite. And because it takes only 20 minutes to make, you’ll turn to this recipe whenever you want a lot of flavor in a little time.

Ingredients

2 tablespoons vegetable oil

¾ pound (51 to 60 count) raw shrimp, peeled and deveined

2 cups bean sprouts

2 cups chopped bok choy

2 red serrano or jalapeño chili peppers

1 tablespoon finely chopped gingerroot

2 pounces (8.8 ounces each) UNCLE BEN'S® READY RICE® WHOLE GRAIN BROWN

2 1/2 tablespoons light soy sauce

1 tablespoon chopped fresh cilantro 

Instructions

  1. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook and stir shrimp 1 minute. Stir in bean sprouts, bok choy, chili peppers and gingerroot. Cook 2 to 3 minutes longer or until shrimp is pink and vegetables are crisp tender.
  2. Meanwhile heat rice as directed on package. Stir rice, soy sauce and cilantro into shrimp mixture until thoroughly combined and heated through.
