About This Dish

This recipe is so delicious, you may think it came from your favorite Thai restaurant! The peanut sauce combines coconut milk, curry paste, and peanut butter, which is then served over a salad of our flavor-infused rice, chicken, and veggies. So quick, so easy, so good!

Ingredients

    Dressing:
  • ¼ cup canned unsweetened coconut milk (not cream of coconut)
  • ¼ cup creamy peanut butter
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons red curry paste
  • 1/8 teaspoon ground cayenne pepper
  • 1 to 2 tablespoons hot water (to desired consistency)
    Salad:
  • 1 cup UNCLE BEN’S® Flavor Infusions Roasted Chicken, cooked according to package directions (about 3 ½ cups cooked)
  • 1½ cups shredded rotisserie chicken
  • 1 cup shredded carrots
  • 1 cup sliced pea pods
  • 1 cup sliced red pepper
  • 1 avocado, pitted and sliced
  • 4 to 6 red radishes, thinly sliced
  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped green onions

Instructions

  1. In a small glass bowl, stir together all dressing ingredients; set aside.
  2. In the center individual plates, place about 1 cup cooked rice.
  3. Arrange remaining ingredients around the rice then drizzle with dressing. Refrigerate leftovers.
