About This Dish

The Parmesan cheese adds a nice Italian touch to this meal—and crème fraiche gives it a rich, creamy texture. This may be the most delectable way you’ve ever enjoyed butternut squash!

Ingredients

  • 1 Tbsp. butter

  • 1 cup butternut squash, diced

  • 2 garlic cloves, minced

  • 1 onion, diced

  • 1 leek, sliced into 1/4-inch strips

  • 1 cup of UNCLE BEN’S® Flavor Infusions Parmesan & Butter Rice

  • 2 cups of water

  • 3 Tbsp. crème fraiche or heavy whipping cream

  • ¼ cup Parmesan shavings (shreds)

  • 2 Tbsp. parsley (garnish)

Instructions

  1. In a 9-inch sauté pan, heat butter over medium heat, adding squash, garlic, onions, and leeks.
  2. Sauté about 3 minutes until onions are translucent.
  3. Stir in UNCLE BEN’S® Flavor Infusions Parmesan & Butter Rice and water.
  4. Bring to boil, then reduce to medium heat and simmer covered for 15 minutes, or until water is absorbed.
  5. Stir in cream and garnish with Parmesan and parsley.
