Savor the flavors of the islands. This delicious Coconut Lime Jasmine Rice Pudding is the perfect dessert for a warm breezy night.


  • 1 cup dry UNCLE BEN’S® Jasmine Rice
  • 2 14-ounce cans coconut milk
  • 1 cup whole milk
  • 1 cup granulated sugar
  • 2 tablespoons butter
  • 2 tablespoons lime zest (from about 4 limes)
  • Juice of 1 lime
  • 1/2 teaspoon salt


  1. Combine rice, coconut milk, milk, sugar and butter in saucepan.
  2. Bring to a boil and stir well.
  3. Reduce heat to a simmer, and cook approximately 25 minutes, stirring every 3-4 minutes.
  4. Rice will plump and sauce will thicken.
  5. When mixture has come together to thick pudding. Stir in salt, lime juice and zest.
  6. Pour into a bowl, cover and cool in refrigerator.
  7. When cool, scoop into individual portions and garnish with more lime zest and toasted shredded or flaked coconut.
