About This Dish

Chili powder and black pepper add just the right amount of oomph to this cheesy, beefy dish.

Ingredients

  • 2 cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice, uncooked
  • 1 cup corn
  • 1 tablespoon oil
  • 1/2 cup diced onion
  • 1/2 cup diced green pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1 pound ground beef
  • 1 can pinto beans (16 ounces), rinsed and drained
  • 2 cups cheddar cheese, shredded

Instructions

  1. Cook rice according to package instructions.
  2. Preheat oven to 350° F.
  3. While rice is cooking, sauté corn in oil over high heat about 3 minutes, add onions and green peppers; continue to sauté another 3 minutes.
  4. Add the seasonings and ground beef; cook until the meat is done, drain off the excess fat and stir in beans.
  5. Spread the cooked rice in bottom of a large casserole dish and pour the beef and bean mixture over it.
  6. Top with cheese and bake in the oven for 10 minutes or until the cheese is melted.
